Ingredients:

  • 2 tablespoons butter
  • 2 medium onions, grated
  • 7 eggs
  • 2 cloves garlic, grated
  • 1 teaspoon white vinegar
  • 1 tomato, diced
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • A handful of parsley, finely chopped
  • A handful of cilantro, finely chopped
  • A small amount of dill, finely chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon ground coriander
  • Salt, to taste
  • Chili flakes, to taste (optional)
  • 200 ml (¾ cup) milk
  • 7 tablespoons all-purpose flour
  • 1 tablespoon baking soda

Step 1: Preparing the Vegetable Mixture

  1. Sauté the onions:
    • In a pan, melt 2 tablespoons of butter. Add the grated onions and sauté until softened and translucent.
    • Remove from heat and let the onions cool slightly.
  2. Prepare the egg mixture:
    • In a large mixing bowl, whisk together 7 eggs with the grated garlic, white vinegar, diced tomato, red bell pepper, green bell pepper, parsley, cilantro, and dill.
    • Add the cooled sautéed onions to the egg mixture.
  3. Add the spices:
    • Mix in the ground cumin, paprika, ground coriander, salt, and chili flakes (if using).

Step 2: Combining the Ingredients

  1. Add milk and flour:
    • Gradually pour 200 ml (¾ cup) of milk into the mixture while stirring.
    • Slowly add 7 tablespoons of all-purpose flour in stages, mixing until smooth.
    • Finally, add 1 tablespoon of baking soda and mix until fully combined.
  2. Baking the omelette:
    • Preheat your oven to 180°C (350°F).
    • Grease a baking dish with butter and pour in the egg mixture.
    • Bake for 20 minutes until the omelette is set and golden on top.

  1. Serve hot:
    • Once baked, remove from the oven and let it cool slightly.
